We roast this bright and crisp coffee to Full-City, which is our lightest roast, to emphasize its pleasant notes of chocolate, orange peel and nut. Roasted any darker, the beans would lose the delicate brightness that makes it such a favorite coffee for breakfast. The Fair Trade cooperative La Union de Sociedades de la Selva cultivates this exceptional coffee in the Lacandon jungle of southern Mexico. The coop is composed of almost 2,000 small-scale indigenous farmers.
